Cargill recently conducted a study and discovered that consumers favor softer gummies containing pectin or tapioca gelatin as opposed to traditional gelatin-based ones due to their reduced potential choking risk and soft texture.

Gummy bears come in various flavors and color combinations, typically consisting of sugar, corn syrup, gelatin, food colorings and flavorings – either natural or artificial – plus fumaric acid or other acids to provide sour nuances. Some variations can even be considered Kosher or Halal depending on their recipe; the main distinction being that Kosher candy does not contain animal products while Halal products cannot include meat or poultry ingredients.

Ingredients

Manufacturers use sodium citrate to help the gelatin set more easily, maintaining an acidity level below 3.5 and thus activating its pectin. Without this buffering agent, gummy candy might never set. Baking soda may also work; but its traditional approach might be less effective; other agents such as phosphoric acid or citric acid might work just as effectively instead.

Packaging

Gummy packaging requires careful consideration when it comes to consumption. For instance, if your gummies are intended solely for adults, include a childproof seal on your package to safeguard them against theft while adhering to state laws regarding legal disclaimers and warnings.

Unfortunately, however, plastic isn’t suitable for gummies which must remain at temperatures exceeding 20C or lower.
